New Tailgate Food Ideas
I know it's only 39 hours until kickoff, but I'm turning to Bobcat Nation and the wisest people I know (rtb and cat_stache excluded...I kid, I kid) for some ideas. I'm looking for new/delicious/favorite tailgating food ideas. I'm mostly thinking appetizer type foods, but I'm open to suggestion.
Fire away!

Re: New Tailgate Food Ideas
WHOA! Don't be leaving me out of this, I am a tailgating food genius!
This week at THE BEST TAILGATE I'll be serving up tacos in a bag(Walking Tacos for some) you know the mini Frito bags with Chilli and Cheese.
The best appetizer I've ever created are what the Texas folks called Armadilla Eggs. They are jalepenos sliced in half filled with cream cheese and sausage and then wrapped in bacon and baked. You can't really go wrong when two pork products are involved on one appetizer.
I have other ideas, but since I am not considered wise enough I wanna see what other ideas people have.
Speaking of tailgating, is there anyone with a business out there that wants your business prominently displayed in trade for helping me with a little(or not so little) tailgate project? If so, PM me.

You are the wisest of the wise. All sound delicious! I'll be stopping by if there happens to be extra tacos in a bag...I'm coming unarmed.rtb wrote:WHOA! Don't be leaving me out of this, I am a tailgating food genius!

Steak. Baked potatoes. Baked Beans. Corn on the cob. On the side, a Low Country Boil--really simple. Huge kettle. Bring it to boiling with about a third of a can of Old Bay Seasoning and throw in about five to fifteen pounds of potatoes. Fifteen minutes later, throw in about five packages of Johnsville Brats cut into thirds. Five minutes later, throw in about five pounds of corn on the cob cut into thirds. Three minutes later, throw in about five pounds of shrimp and if you want, a couple of pounds of pre-cooked crab legs. As soon as the shrimp is done (they turn red and float to the top) drain the water and throw the whole works on a picnic table covered with newspaper. Ask Bobcatbulldog for a slight derivation for the Mississippi way of doing a low country boil.

On the menu for us this weekend is Shredded Chipotle BBQ Pork Sandwiches. 13 lb pork butt sitting in a chipotle pepper brine for 24 hours, dry rub and bake at 225 for 12 hours, let sit for 1 hour, shred add chipotle bbq sauce, and serve with honey mustard coleslaw. Yeah, I watch the food network a lot. This is my first time with this recipe...hope it turns out?!?

Wow...That sounds amazing! Since you posted your tailgate location on the map, I'm assuming you want everyone to stop by and help you eat it...that's really generous of you.CATCO wrote:On the menu for us this weekend is Shredded Chipotle BBQ Pork Sandwiches. 13 lb pork butt sitting in a chipotle pepper brine for 24 hours, dry rub and bake at 225 for 12 hours, let sit for 1 hour, shred add chipotle bbq sauce, and serve with honey mustard coleslaw. Of course we will share with you and maybe even offer a gentleman's handshake to call off the hounds and end the icing for once and all. This world needs more peace, not war! Come get a Walking Taco of two!coachouert wrote:You are the wisest of the wise. All sound delicious! I'll be stopping by if there happens to be extra tacos in a bag...I'm coming unarmed.

No offense to coach, but after what we pulled I think I might just keep one with me for safety's sake for awhile longer.rtb wrote:Of course we will share with you and maybe even offer a gentleman's handshake to call off the hounds and end the icing for once and all. Bake or micro up a bunch of baked potatoes and put them in a roaster, or whatever to keep warm. Then bring all your favorite toppings like, cheese, sour cream, chili, chives, bacon, hamburger, and the kitchen sink. They are filling and great!!!!!
